To say that Angus Thirlwell is passionate about chocolate would be an understatement because, as he willingly admits, it’s more of an obsession. Heather Mills is the founder of the plant based ethical Vegan food company VBites. She has encountered an unusual life of extraordinary circumstances. A woman that has an inert ability to defy and conquer anything that falls in her path.

In 1993 Heather suffered the loss of her left leg below the knee due to an accident. To save her amputated leg from constant infection she went on a plant-based diet. I founded Jubel after discovering a dangerously refreshing beer tradition at a ski bar in the Alps that was too good not to share so I sunk my savings into a big brew that flew at a festival and escaped my 9-5 to pioneer a new style of beer. It took 18 months to fine-tune the beer, working with the UK’s twice-awarded Brewer of the Year to craft the perfect balance. Beer has been a strong theme in my family – my Dad was a broker for breweries, Grandad ran pubs, and Great Uncle was a Head Brewer.

During my studies at the University of Exeter, I followed the family footsteps and managed to win two innovation competitions with Heineken and AB InBev, going on to intern with them.

After graduating with a degree in Economics & Finance, I joined the Mars Chocolate Management Development programme and worked in Marketing as the Maltesers Brand Manager. Our relentless focus on beer quality at Jubel was rewarded when our Alpine beer was voted the UK’s Best Fruit Beer and Urban the UK’s Best Botanical Beer under heavy competition from many well-renowned breweries in the 2018 World Beer Awards.

Together with husband Mark, Maria set up the Hawkshead Relish Company making handmade Relishes, Pickles and Preserves to serve in their cafe in the honeypot village of Hawkshead in the English Lake District in 1999. Following the Foot & Mouth outbreak in 2001 they were faced with almost losing everything and only by diversifying, and dogged determination were able to continue. Today they make around 5,000 jars a day all by hand using traditional open pans, they make private label for customers which include Liberty’s, Fortnum & Mason, Tom Kerridge and many others alongside a wide range of their own products including the world’s first Black Garlic Ketchup which Mark developed in 2017. They have over 60 Great Taste Awards and a plethora of business awards recognising their achievements.

Maria looks after the office, finance, marketing and sales, with a close eye on business growth and strategic planning. She has a book being published in September 2019 which tells their story and has recipe ideas to help release condiments from the cupboard to use as ingredients. Maria has also sat on the Defra board that helped to develop the Food & Drink Export Plan for the UK. Both she and Mark were awarded joint MBE’s in 2011 for their work in the food industry in Cumbria.

Rich has a degree in Engineering and worked in commercial and finance roles before he decided to pursue his passion for innovation in food & beverage. MOJU has grown from a juice being made in a home kitchen and sold at local markets and music festivals, into the market leader of juice shots and the fastest growing brand in the UK juice and smoothie category.

Rich is forever fascinated by how things work and connecting the dots. Siân graduated from a Business studies degree in 1983 and started life as a marketing consultant within a small London firm, where she conducted market research for Jim Garrahy, an American wanting to establish his fudge company in the UK. Some years later she realised the business had never fulfilled its potential; that it required significant investment and a re-think to work. In 1995 she took the plunge, bought the business and spent five years reinventing the offer into a premium, artisan confectionery, developing the brand’s pioneering ‘retail theatre’ model, where fudge is now made traditionally in front of the customer in the seven cathedral-city-based shops, and also sold via their website and at numerous shows and events.

In 2012, following a two-year project to extend the product shelf-life, Siân launched a wholesale range to grow the business within the UK and for export – developing new products for new markets. In the last six years they have enjoyed significant growth; established a stand-alone production facility with the help of the RGF and launched over 70 trailblazing new products, beyond fudge to caramels, brittles sauces and Drinking Fudges. Selfridges, Harrods, Claridges, Hotel Chocolat and Wembley are amongst their growing customer base and they now employ around 70 people FTE.

Monika Linton is the Founder of Brindisa Ltd and Co-Founder of Brindisa Kitchens. The name comes from the Spanish word, “brindis”, the act of raising your glass.

Monika founded Brindisa in 1988, to import and distribute fine Spanish food. Within a decade, Brindisa was firmly established as the source of high-quality Spanish foods amongst chefs and specialist retailers nationwide. Monika’s aim has always been to champion smaller producers from all over Spain and showcase their craft, thirty-one years later, the business sources many hundreds of Spanish products.

In 1996, Monika was fundamental in the change and regeneration of Borough Market. Brindisa was based on the edge of the market, in those days a declining wholesale fruit and veg outlet, and Monika had the idea of opening the Brindisa warehouse at weekends for selling directly to the public. In this Brindisa was soon joined by NYD and Turnips and these sales became the seed of what is now the thriving retail market.

It was always Monika’s dream to open a restaurant to showcase Brindisa’s range of foods. In 2004 she co-founded Brindisa Kitchens, opening a tapas restaurant in Borough Market. Since then she has opened a further 4 restaurants in London.

Monika’s book, “Brindisa, The True Food of Spain” is enormously informative about the food culture of Spain and is also a story-book that brings to life many of the people and places that she has encountered since 1988. It was published by Harper Collins in 2016.

During his time at innocent he developed the wholesale strategy and business development with the likes of Bidfood and Brakes, and key regional wholesalers as well as several key end users within the contract catering, leisure and QSR sectors.

In final years, he took ownership of the in-house national field sales team calling on Wholesale and Foodservice sites and delivering well over £1m of new business, as well as managing ad-hoc agency “blitzes” to launch NPD at scale.

It all began with a trip to Tokyo where Howard and his sister Vivien discovered mochi ice cream. They became obsessed with the delectable bite-sized balls of ice cream wrapped in a soft layer of chewy rice dough and realised that there was nothing like this in the UK.

They decided to re-invent the products with a European twist combining Japanese mochi with Italian-style gelato to create the most delicious and indulgent eating experience. Barbara is a Consultant in the Food Safety and Quality team at RSSL. She has worked in this team since 2014 and previously, she was the Laboratory Manager of the RSSL department of DNA and Protein which is responsible for the analytical testing for allergens. During this time, she also supported manufacturing sites to advise on sampling and testing options and interpretation of results.

Barbara has a B.Sc. in Genetics and has been working in the field of Molecular Biology since she graduated. She has worked at RSSL since 1998 and was responsible for growing the analytical testing service in the area of allergens as well as more recently working to grow the consultancy offering. Barbara now has extensive experience in partnering with clients to understand the issues they have with allergen control, and in providing them with targeted support through factory visits and training, as well as making recommendations around analytical testing.

Barbara has worked with many different food manufacturing and catering companies. She brings a practical and pragmatic approach to allergen management. She has advised many companies on their codes of practices for allergens and supported companies through allergen issues, as well as providing proactive consultancy and training in this area.
